Meet your chef:
Nicco Muratore
Nicco was born and raised in Boston, where he got his start cooking at the restaurants inside the historic Fenway Park.
He was then introduced to Middle Eastern cuisine under Chef Ana Sortun at Oleana and Sofra. Three years later he moved on to The Montagu Kitchen at London's Grand Hyatt, then Danny Meyer's Union Square Cafe in New York, before returning to Boston for five years at Commonwealth, where he worked up from Sous Chef to Chef de Cuisine and cooked at the James Beard House four times.
He joined Mamnoon in Seattle in 2019 and became Mama Group's Culinary Director in 2022, overseeing the culinary teams across all six of its restaurants. That same year he won a pickle-themed episode of Food Network's Chopped. In 2023 he taught koji and fermentation at Harvard's Science and Cooking Program.
Since 2024 he's taught fermentation, preservation, butchery, foraging, and seasonal cooking full time, and since 2021 he's cooked for backcountry hut trips and expeditions.
Nicco lives in Seattle with his wife Sam and their dog, and spends his time off hunting mushrooms, hiking, and skiing.

Koa Mack
From the majestic volcanoes of Oregon, to the jagged peaks of the North Cascades, to the untouched wilderness of Alaska, Koa has spent countless hours hiking in the Pacific Northwest backcountry. Koa is equipped with deep, practical knowledge for safe and confident backcountry travel and holds a Wilderness First Responder certification.
Koa started Koascape with the goal of helping others realize the incredible potential outdoor recreation holds for adventure, exercise, and inspiration. By helping others discover the wonders of the natural world and benefits of outdoor recreation, Koascape hopes to grow a community of environmental stewards that advocate and inspire others to protect these wild spaces.

Meet your guide:
Chris Rudy
Chris Rudy (friends call him Rudy) is a WA based guide. He started skiing when he was 4 years old, but it took him much longer to realize how much joy it gave him to be outside and what role adventure needed to play in his life. He loves taking people out in the mountains to help them accomplish their goals, and have some of the best days of their lives.
Chris is a certified AMGA ski and glacier guide and holds a Wilderness First Responder certification.
